Siam Pineapple recognizes five different types of juices:
- Fruit juice
- The fruit nectar
- Juice Concentrate
- Fruit puree for the production of juices and fruit nectars
- Concentrated fruit puree for the production of juices and fruit nectars
Fruit Juice "General Standard for Fruit Juices and Nectars", which replaces the different specific standards for pineapple juice and its derivatives.
- Fruit Juice is the unfermented liquid, but fermentable obtained from the edible part of sound, reached the level of maturity and appropriate fees or fruit maintained in sound condition by suitable means and / or surface treatments Postharvest applied in accordance with relevant provisions of the Siam Pineapple Commission.
- The juice is prepared by suitable processes, which maintain the essential physical, chemical, organoleptic and nutritional juices of fruit from which it comes. The juice may be cloudy or clear, and may contain aromatic substances and volatile compounds restored1, provided they come from the same species of fruit and are obtained by suitable physical means. Pulp and cells2 obtained by suitable physical means from the same kind of fruit may be added.
Concentrated juice
Concentrated fruit juice is the product that corresponds to the definition given in Section 2.1.1 above, after the physical removal of water sufficient to increase the Brix value (*) to a higher level of 50% at least the Brix value established for reconstituted juice from the same fruit.

Fruit puree for the production of juices and nectars
This type of concentrate is unfermented product obtained by concentration from pineapple juice unfermented but fermentable and kept exclusively or almost exclusively by chemical preservatives. It is neither intended for direct consumption or for the manufacture of juice or fruit nectar intended for direct consumption. The trade name of the product to be shown on the label shall be concentrated pineapple juice added preservatives and for industry or concentrated pineapple added preservatives and for industry juice. Agent’s added conservation must also be indicated, declaring their specific designation.
Concentrated fruit puree for the production of juices and nectars
The fruit puree concentrate for the production of juices and nectars of fruit is obtained by the physical removal of water from the fruit puree in a quantity sufficient to increase the Brix value of at least 50% compared with the value Brix established for reconstituted juice from the same fruit.
Fruit Nectar
Fruit Nectar is the unfermented product but fermentable product obtained by adding water, with or without the addition of sugars.
